Super Blueberry MOM My super "MOM" deserves to be spoiled any day with a delicious blueberry breakfast in bed. The 'Blueberries in pajamas' recipe is an easy and quick way to serve a healthy, delicious breakfast. Add a soft boiled egg, some rolls, blueberry tea, a tiny flower bouquet with a blooming blueberry branch and Super Blueberry Mom is ready to conquer the day. I Love ya forever Super Blueberry Mom! Blueberries in Pajamas5 cups fresh or frozen blueberries2 tablespoons honey1 tablespoon minced crystallized ginger1 teaspoon orange zest1 tablespoon orange juice1 teaspoon fresh thyme leaves4 parchment paper pieces, 15 by 15-inches square 2 cups granola cereal with dried blueberries2 cups orange or lemon low fat yoghurtPreheat oven to 400 degrees F.In a bowl combine blueberries, honey, ginger, zest, juice and thyme. Place an equal amount of blueberry mixture into the middle of each parchment paper square. Fold over and tightly fold all edges to enclose filling. Place packets on a cookie sheet and bake at 400 degrees F. for 20 minutes or until paper is puffed up. Frozen berries take about 5 minutes longer to bake.Place each packet into a bowl, cut open and serve with granola and yoghurt. Enjoy!Serves 4

My mother loves blueberries and I love my mother!I will admit that I am not much of a cook, but I DO make my mother snacks. Not just on Mother's Day, but year round. She is the best mother a kid like me could ask for.This year my mother was served a sweet for Mother's Day breakfast. I mixed fresh blueberries with blueberry jam and a small amount of fresh lemon juice. I then warmed this up in the microwave oven and poured it over fresh shortcake cups followed with a squirt of whipped cream! On the whipped cream I sprinkled grated lemon zest.You can do many things with blueberries, but frankly, I like them just plain. Delicious and a very healthy snack!

On this Mother's Day, I was suprised by my family with a wonderful Blueberry Breakfast. Seeing the feast before my eyes, I immediately knew how hard they worked on preparing such a feast for me. After my fantastic breakfast, I wanted to share some of this moment with MY mother. I knew it would be a suprise of what her grandaughters and daughters had in store for her....a cruise with her daughters and grandaughters this summer. We celebrated in sharing one of the Blueberry Smoothies my daughters made me. My family prepared the smoothie by using a frozen mixed fruit smoothie package, added in some blueberries, yogurt, and some milk. (This is what they tell me.) I can not begin to describe the bubbly, giggly, and ornery laughter that erupted as we took this picture. We did promise to share another drink like this on our first day of our cruise together. I can not wait to to share this time with you Mom, I LOVE YA!!!!

My Momma is the best Momma out there! She knows I love blueberries and she buys them for me all the time.This year for Mother's Day, my daddy helped me make my Momma a super yummy blueberry breakfast.We made blueberry pureed crepes. They were filled with a yummy lemon blueberry ricotta custard. We topped them off with more fresh blueberries, lemon slices, fresh whipped cream and crystallized ginger. My Momma just loved it! She said it was the perfect breakfast from her blue-eyed, blueberry loving daughter. And we found out Momma is going to have another baby girl. I can't wait to make more blueberries crepes for Momma next year with my sister!

Basil & Brie Omelette with Orange Marmalade and Fresh BlueberriesIngredients:2 jumbo eggs2 teaspoons freshly minced basil1 teaspoon thick cream2 teaspoons unsalted butter3 ounces softened brie cheese cubes2 tablespoons orange marmalade1 2 cup fresh blueberries1 teaspoon fresh grated orange zestDirections:In a bowl, whisk together eggs, basil and cream.Melt butter in a six inch skillet over mediun heat.Pour in egg mixture and swirl around pan.When edges start to bubble, turn heat to low and addbrie cheese. When cheese has almost melted, fold omelette in half and cook 30 seconds more.Flip over omelette and cook an additional 30 seconds.Transfer to a heated plate and spread with marmalade.Heat blueberries in microwave for 1 minute then scatter over omelette. Sprinkle with orange zest.Yield: one decadent omelette
